My friend, Hugh, loves his brownies, so I made this recipe for him so he could practice making brownies. Now, I’ve only made these once. Hugh and I are going to have to work together to perfect it. If you and your kids want to join in the fun, feel free!
Hugh’s Crazy-Good Brownies
Preheat oven to 350 degrees and really grease up a 9 X 9 inch pan
In a small mixing bowl, combine
2 T ground flax seed and
6 T water
(or ½ cup flax eggs)
Set this aside to get gloopy
Into a medium-sized mixing bowl, put
1 cup white whole wheat flour
¾ cup all-purpose flour
½ tsp. baking powder (scant)
1 ½ cups sugar
¾ tsp. salt.
¼ cup good-quality baking cocoa powder
Use a whisk to mix this together well.
In a double boiler, melt
6 T vegan margarine (cut into little cubes)
4 oz. unsweetened baking chocolate cut into little pieces
Stir a little until melted
While you’re waiting for chocolate and butter to melt, chop
¾ – 1 cup walnuts into ¼ inch pieces
In a 2 cup measure, heat
¾ cup coffee
in microwave until steaming (but not boiling)
Add melted chocolate and butter, flax egg and whisk to combine
1 tsp. vanilla
Add wet ingredients to dry ingredients. Dump in walnuts. Stir until just mixed.
Pour into pan and press until it is nice and even. Bake on middle rack for 30 minutes
