Morgan’s Magnificent Salad

morgans salad blog postFor our first few years, Morgan was a staple ingredient at our supper clubs.  Now she is a satellite member from North Carolina.  I know wherever she goes, she will always be part of our community.  She is a treasured friend and an amazing vegan cook.  About this salad, she says: It’s great for gatherings because it makes a lot and people always request the recipe. In fact, that’s how I got the recipe from a friend several years ago. And if you aren’t making it for a crowd, it’s easy to cut in half.

Broccoli Slaw Salad

2 packages broccoli slaw
1 cup chopped celery
1 bunch chopped green onions
1 cup sunflower seeds
1/2 cup oil
1/2 cup sugar
1/4 cup apple cider vinegar
2 teaspoons soy sauce
2 packages ramen noodles (not the flavor packets) crushed small
Mix the slaw, celery and onions in a very large bowl.
Mix the oil, sugar, vinegar and soy sauce together and pour over the salad.
Top with seeds and crushed noodles. Combine well.
Chill for at least a few hours to let the flavors meld.

To me, being able to explore new dishes and make new friends was my favorite part of supper club. Knowing all the food was plant-based was the icing on the cake because being a vegan and going to someone’s house for dinner can be a nerve wracking experience. I always said supper club was my favorite night of the month and being so far away in North Carolina is very hard when I see the event announcement and the “after party” pictures. But I am very happy that it is still going strong and I hope to some day start something similar.
